Potato Sandwich Fritters / Punjabi Style Bread Pakoda is an easy and delicious street food which is perfect for an evening snack!
Pakoda is a very famous street food throughout India and comes in a variety of shapes and sizes. They are made with all kinds of vegetables, like onions, tomatoes, mix vegetable etc. Punjabi bread pakoda is a little different from the usual pakoda, but I can surely say it is one of my favorites!
What Makes Potato Sandwich Fritter special?
In general, I love most of the Indian street foods mainly because of the flavor and the fact that it is so simple to make. Pakodas are perfect for any evening, but it is so perfect when we are having friends over for an evening. It goes so well with cocktails or even with evening tea!
Potato Sandwich Fritters / Punjabi Style Bread Pakoda:
Serves 6
- Potato – peeled – cubed – boiled – 2 cups
- Salt – 1/4 tsp + 1/2 tsp
- Red chili powder / Paprika – 1/4 tsp + 1/4 tsp
- Garam Masala – 1/4 tsp
- Black Salt – 1/4 tsp
- Green chilies – minced – 1/2 tsp
- Chickpea flour / Besan – 1 cup
- Sooji / Semolina – 1 tbsp
- Rice flour – 1 tbsp (optional)*
- Cornstarch – 1 tbsp (optional)*
- Water – 1 cup
- Baking soda – 1/4 tsp
- Cilantro – fresh – minced – 1/4 cup + for garnish
- Bread slices – 6 (White bread preferably)
- Oil – for deep frying ( around 2 cups or more depending on your pan)
- Green chutney – 1/4 cup (Click the word “Green chutney” for recipe)
For Stuffing:
- Mash the cooked potatoes either with a masher or pass it through a ricer. Try to mash them as smoothly as possible.
- After that, add salt (1/4 tsp), Red chili powder (1/4 tsp), garam masala, black salt, green chilies and mix everything well.
- And then keep it aside.
For the batter:
- In a deep bowl, put besan/ chickpea flour, salt(1/4 tsp), red chili powder(1/4 tsp), sooji/semolina, rice flour, cornstarch, baking soda, mix everything well with a spoon.
- Next add water 1/4 cup at a time, up to 1 cup. The batter should not have any lumps and it should be of smooth medium thick consistency. If you think it is too thick, add little more water.
Method:
- Place the oil in a heavy bottom deep frying pan and let it heat unto 350F.
- While it is heating, cut the corners of the bread and then cut them diagonally to form triangles.
- Next on one triangle, spread 1/2 tbsp green chutney
- Then take 2-3 tbsp of stuffing, spread it on the above triangle with green chutney, cover it with another bread slice to make a sandwich.
- Later prepare 6 sandwiches in the same way.
- Once the oil is hot, dip the sandwich in the batter** and deep fry them approx. for 2 minutes on each side, until the pakoda is golden brown.
- Lastly, serve hot!
*Rice flour and cornstarch are added to make pakodas crispy. If you have either one you can add just the one or if you don’t have any one of them, you can skip it.
**The process of dipping sandwich into batter has to be done quickly, don’t leave the sandwich in the batter for more than few seconds, else it will become soggy and it will be very difficult to handle it.
