One of the things which I really admire about various cuisines in India is rice pudding. Rice is called chawal, Meeta is sweet in Hindi. There are so many variations of meetha chawal, even though most of them use sugar or jaggery, somehow they are all delicious. This recipe is the lazy day kind of meetha chawal recipe. I think sweets taste more delicious when someone gives them to you or when you spend the least amount of time to make them 😉
What makes Sweet Rice so special?
I love this dish because I can use up my leftover chawal to make something really delicious! To top it off, I need a pan, a spoon or ladle, 5-7 minutes to make it. The flavor is amazing!
Meetha Chawal / Sweet Rice (Himachal Pradesh Style) Recipe:
Serves 3-4
- Butter / Ghee – 2 tbsp
- Cooked rice / Left-over rice – 1.5 cup
- Milk – 3/4 cup*
- Sugar – 1/4 cup
- Cardamom – crushed -1/8tsp
- Saffron – 3-4 strands
- Almonds, Cashew, Raisins (all mixed) (optional) – 1/4 cup
- Place butter in a pan/pot on a medium heat
- Let the butter melt and add the nuts, fry them for few seconds until they are golden brown.
- Next, add milk.
- Bring the mix to a boil.
- Next, add sugar.
- Keep stirring it occasionally until the sugar is completely dissolved.
- Next, add cardamom and saffron, mix everything well.
- Lastly, reduce the heat to low, add cooked rice.
- Once the rice soaks all the milk, take it off heat.
- Let it cool down a little bit and serve it.**
*Almond milk / Coconut milk are the best-suited alternatives instead of ordinary milk.
**In case you want to serve it chilled, let it cool completely. Place it in the refrigerator for 1-2 hours.
