Sheermal is a delicate and delicious one of a kind flatbread which is so easy to make, is perfect for evening tea!
Jammu & Kashmir is well known for many kinds of foods, and various flat breads is one of its speciality. There are many kinds of flat breads and they are often consumed for breakfast, snack and dinner too. One of the breads which really caught my attention was Sheermal, as it’s main flavor is saffron.
What makes saffron bread so special?
The ingredients of saffron bread are so rich, my initial thought was that it would be heavy, but it was light and delicious. It is great for a evening snack with tea or works beautifully with soups.
Sheermal / Saffron bread recipe
Makes 4-5
- All-purpose flour – 1.5 cups
- Almond flour – 1/4 cup*
- Milk Powder – 1/4 cup
- Sugar – 1 tbsp
- Salt – 1/2
tsp - Cardamom powder – 1/8 tsp
- Egg – 1 (at room temperature)
- Water – 2 tbsp
- Saffron – 5-6 strands + 5-6 strands
- Milk – 4-5 tbsp
- Kewra water – 1 tbsp
- Ghee – 2 tbsp (melted) + for brushing before
servin
*Almond flour is optional. If you don’t want to use it, replace it with all purpose flour.
- First, soak one set of saffron into 2 tbsp of water and keep it aside.
- Next, sift all-purpose flour, almond flour, milk powder, sugar salt, and cardamom powder into the mixing bowl.
- After that, in a separate bowl, beat the egg with a fork.
- Later, add kewra water, milk, saffron water, and ghee to the egg.
- Next, mix the dry and wet ingredients to make it into a smooth dough.
- It is possible that dough can be sticky at this point.
- Once the dough is ready, cover it with a cloth and let it rise in a warm spot for 1-2 hours.
- Later, preheat the oven to 400F.
- Next, divide the dough into 4-5 equal parts.
- After that roll the dough into balls and with a rolling pin, make them into 5-inch disks.
- Press it down with a fork and bake it for 13-14 minutes until it is golden.
- Lastly, brush it with ghee and serve warm.
