Phirni IS A SIMPLE RICE PUDDING WHICH NEEDS ONLY 7 INGREDIENTS AND ONLY A FEW MINUTES TO PREPARE!
Rice pudding is one the dessert recipe made throughout India. Every state has their own way of making it. Today’s rice pudding is a famous dish of Kashmir and it is called Phirni.
WHAT MAKES BROKEN RICE PUDDING SO SPECIAL?
I like this dessert, especially for its pleasant flavor of the combination of Basmati rice and Saffron. An added bonus is the desert is very creamy because of the broken rice.
Kashmiri Phirni / Broken Rice Pudding recipe
Serves – 4 – 5
- Basmati Rice – Soaked for 1-2 hours – 1/2 cup
- Whole milk – 3 cups*
- Water – 1 cup
- Sugar – 3/4 cup
- Saffron – 1/4
tsp - Green Cardamom – crushed- 1/4
tsp - Almonds and Pistachios – 2 each for garnish**
- First, drain the water from the basmati rice and spread it on a kitchen towel.
- Next, let it dry for around 10 minutes.
- Meanwhile, put milk and water on a heavy bottomed pan.
- Next, place it on medium-high heat and bring it to a boil.
- After that, bring the temperature down and let it simmer until the quantity reduces to around half.
- Now, put the semi-dried basmati rice in blender or food processor and make it into coarse pieces, without adding water. Be careful not to make it into a smooth powder.
- Next keep the rice aside, and in a small mortar crush cardamom and saffron together. Keep it aside too
- Once the milk boils down, next, add coarse rice pieces, saffron and cardamom mixture.
- Next mix everything well and cook for 5-10 minutes till rice is soft.
- Lastly, add in sugar, mix everything well and let it cook for another 5 minutes until sugar is completely melted.
- Once done, close the lid and let it come to room temperature.
Lastly chill it for at least 2 hours and serve with some almonds and pistachios
*Any kind of milk can be used. If using almond milk or soy milk, you can use 3 cups of milk and reduce the time you boil the milk. **Traditionally this desert is served with nuts, but it is optional.
