Gatte ka Pulav IS A DELICIOUS AND HEALTHY RICE DISH WHICH IS PERFECT FOR A SIDE OR AS A MAIN DISH!
Rajasthani food is known for its rich flavors using local ingredients. Gatte ka Pulav is a delicious medley of Gatta (chickpea flour dumplings) and rice. This Indian pulao is cooked on special occasions and savored by people of all ages.
What makes this Rice Pilaf with Chickpea flour dumplings so special?
Pulav, in general, is a rice dish prepared using vegetables or meat, but in this recipe, Gattes replace the vegetables or meat. Tossed with mildly spiced Gattas, it is the ideal main course option for parties or for weeknights. It can be relished as it is or can be served with yogurt or dal.
Gatte Ka Pulav / Rice Pilaf with Chickpea flour dumplings recipe:
Serves 4-5
Here’s what we need:
- Onions – Cubed – 2 cups
- Garlic – Minced – 1tbsp
- Ginger – Minced – 1tbsp
- Green chilies – 4
For Gatta
- Chickpea flour / Besan – 1 cup
- Carom seeds – 1/2 tsp
- Red chili powder – 1/2 tsp
- Turmeric – 1/2 tsp
- Oil – 3 tbsp
- Water – less than 1/4 cup + water in a heavy-bottomed pot for boiling gatte.
For rice
- Oil – 1 tsp
- Cardamom – 3
- Peppercorns – whole – 10-12
- Curry leaves – 1 stem
- Cashews – 5-10 (optional)
- Salt – to taste
- Cooked basmati rice – 3 cups
Here is how we do it:
- First, make a coarse paste of the 4 ingredients in a chopper or food processor and keep it aside.
- Now, place the water in the heavy-bottomed pan on low-medium heat and bring it to a simmer.
- Next, place all the ingredients in a bowl for gatte.
- Then, add water little by little and make it into a smooth paste.
- After that, roll it into sausages.
- By this time, the water will be simmering or wait till it gets to simmer.
- Now, put all the sausages in the water and let them cook for around 8-10 minutes until you see that the sausages are pale yellow in color and have little bubbles formed.
- Next, take them out of the water and place them in a plate and let them cool down for 5 minutes.
- Once they are slightly cool, cut them into discs about 1/2 inch thick and keep them aside.
- Next, we are going to make the rice. Place a pan on low – medium heat and put 1 tsp oil in it.
- After that, shallow fry the gatte pieces for 2-3 minutes on each side until they are sizzling and golden on each side.
- Later, add cardamom, peppercorn, curry leaves, and cashews, mix everything and fry for another couple of minutes.
- Next, add the coarse mix, salt and fry it for 4-5 minutes until the onions are translucent.
- Finally, add the cooked rice, toss everything gently and serve hot!
