There are so many reasons I like this dish. There is hardly any preparation involved, no cutting, no grinding, yet this flatbread is so rich in flavor, in fact,t it doesn’t need any condiments. All we need to do in to put all the ingredients in a bowl and knead it, roll it and toast it. How simple is that?!
Missi Roti / Easy No Yeast Indian Flatbread recipe:
This recipe makes 8-10, 6-7inch rotis.
- Whole wheat flour (Atta) – 1 cup
- Chickpea flour (Besan) – 1/2 cup
- Salt – 1/2 tsp
- Carom Seeds – 1/2 tsp
- Paprika – 1/2 tsp*
- Onion Powder – 2 tsp**
- Cilantro – 1/4 cup (minced)
- Oil / Ghee / Melted butter – 2 tbsp (warm)
- Water – 1/2 cup – 3/4 cup
- Mix whole wheat flour and chickpea flour into a bowl and mix it roughly.
- Next, add oil and mix everything in such a way that oil blends in.
- After that, add rest of the ingredients except water and mix it roughly.
- Later add water little at a time until it forms a smooth dough.
- Now, let it rest for 15-30 minutes.
- Before making rotis, knead the dough lightly once more.
- Next, pinch the dough into smaller pieces and make each piece into a smooth dough ball.
- After that, coat each dough ball with dry flour and roll each dough ball into a circle by using a rolling pin.***
- Use more dry atta/flour if required.
- Now, place the griddle on low-medium heat.
- Once the griddle is hot, toast the roti on both sides, for 30-60 seconds on each side.
- Serve hot with some yogurt.
*If you want to make roti’s spicier, feel free to add more paprika. You can use any chili powder that is available in your house.
**In the traditional recipe, minced onions are used instead of onion powder. You can replace onion powder with 1/3 cup of minced onions. But keep in mind, when using fresh onions, after the dough rests, it can become soft or sticky. In that case, knead the dough by adding some more dry flour/atta.
***Coating the dough in dry flour will prevent the dough ball from sticking to the rolling surface and rolling pin.
