Delhi style Falooda is a simple delicious beverage that needs only a few minutes to make and 9 ingredients!
Falooda is a fun ice cream float which brings together lovely flavors and unexpected ingredients into one glass! There are 2 kinds of falooda, one is made with usual milk, the other is made with condensed milk called rabdi falooda. Today I am going to share the first kind of falooda, but I am making the simple version with soy beverage. You can substitute with any kind of milk or beverage you are comfortable with.
What makes Rose flavored ice cream float so special?
I love this because of the mild rose flavor and the combination of various ingredients with different textures like ice cream, vermicelli, and tukmaria seeds (has a texture like chia seeds). The combination of all this makes it special along with the fact that is so customizable. Some people also add pieces of jello in it. Even if you eliminate something, it is still flavorful!
Delhi style Falooda / Rose flavored ice cream float recipe
Serves 2
For rose syrup
- Water – 3/4 cup
- Dried rose petals – 1/2 cup
- Sugar – 1/2 cup
For falooda
- Tukmaria seeds/ Sabja seeds – 2 tbsp soaked in 1/4 cup water for 10-15 minutes*
- Rice noodles – cooked as per package instructions – 1/3 cup
- Soy beverage – 2 cups (chilled)
- Rose syrup – 3 tbsp (or as desired)
- Ice cream – 2 scoops (Vanilla flavored)
- Pistachios – for garnish (optional)
To make rose syrup:
- First, place sugar and water on a pot on low-medium heat.
- Next, stir until dissolved and add rose petals.
- Let the mixture simmer on low heat for 10 minutes.
- After that remove the mixture from heat and let it come to room temperature.
- Finally, filter the mixture and store it in a bottle.
To assemble falooda:
- In a long-stemmed or any container as desired, first put the rose syrup.
- Next, add soy beverage and stir the mixture.
- Add bloomed tukmaria seeds, rice noodles and stir it lightly.
- Top it off with ice cream and garnish with pistachio seeds and serve immediately.
*Tukmaria seeds are similar to chia seeds and it takes a few minutes for them to bloom in water.
