Hey friends! Here is another delicious family recipe which I learnt from my mother in law. It is a yummy soup with coconut milk, tomatoes and some spices. I make this quite often at home, we love this because of the natural sweet flavor of coconut milk and the acidic flavor of tomatoes just pairs along so well. This is good with grains like white rice, brown rice, forbidden rice, quinoa etc.
Here is what we’ll need : ( serves 2 as soup, serves 3-4 as side dish)
- Mustard seeds – 1 tsp
- Cumin seeds – 1 tsp
- Asefotida – A pinch
- Garlic – sliced – 3 large cloves
- Serrano pepper – sliced – 1
- Tomatoes – 1.5 cups
- Coconut milk – 2 cups
- Whole milk or water – 1/2 cup
- Rice flour – 2 tbsp
- water – approx 1/3 cup.
- Oil – 1 tsp
Here is how we’ll do it:
- Place a pan on medium heat and put oil in it.
- Once the oil is warm put mustard,cumin seeds and asefotida. Just wait for few seconds until they splutter.
- Then add garlic and pepper and let them fry till garlic is golden brown.
- Add tomatoes and mix everything well. Close the pot with the lid.
- Once the juice oozes out of tomatoes, add coconut milk and bring everything to a boil.
- Meanwhile in a small bowl, mix rice flour and water and bring it to a consistency of thick liquid.
- One the coconut milk mixture comes to a boil, put milk/ water into it, mix everything well and bring everything to a boil once again.
- Next add the rice flour mix slowly into the entire liquid mix while stirring simultaneously.
- It is important to do the above step correct else there might be lumps in the soup which is not good.
- Lastly add salt , garnish with coriander and serve.
Tips :
- If the soup is very thick feel free to add some water.
- This will stay good in the refrigerator for a couple of days in a air tight container.
