Bedmi Paratha is a delicious, one of a kind flatbread, which is so easy to make, has a wonderful spice combination!
Bedmi is another kind of stuffed flatbread which is native to the state of Uttar Pradesh. Being a south Indian, I use black gram on a daily basis. Honestly, I don’t know what will happen to the amazing breakfast recipes of South India without black gram. Using this lentil as a stuffing to flatbread is a completely new idea to me. I gave it a try and loved it!
What makes Black gram stuffed flatbread so special?
In general, I like the idea of stuffed flatbreads, as these are one of the food items that can fit in everywhere or nowhere. Meaning, you want to have it as a snack, go for it else, you want to have it as a part of a meal, it still fits in. After exploring so many options, I have a feeling, that moms and grandmas came up with the idea of stuffed flatbread when kids don’t eat their vegetables and lentils. Not sure if that’s true, but doesn’t matter if it true as long as it works 😉
Bedmi / Uttar Pradesh style stuffed flatbread recipe:
Makes 6-8
- Whole Wheat flour / Atta: 2 cups
- Water – 3/4-1 cup
- Salt – 1/2tsp + 1/2tsp
- Oil – 1-2 tbsp + 1tsp + for roasting
- Urad Dal – 1/2 cup ( Soak it for 6-8 hours; Makes 1 cup)
- Asafoetida – 1/8tsp
- Fennel Seeds- 1/2tsp (coarsely ground using mortar)
- Cumin Seeds – 1/2tsp (coarsely ground using mortar)
- Green Chili – minced – 1/2tsp
- Chili powder / Paprika – 1/2tsp
- Coriander powder – 1tsp
- Garam Masala – 1/4tsp
- Dry ginger powder – 1/8tsp
- Fresh Coriander – minced – 2 tbsp
For the dough :
- Place whole wheat flour, water, 1/2tsp salt, 1tbsp oil into a bowl and mix them well.
- Next, add little water at a time and make it into a smooth, soft dough.
- Let it rest for 30 minutes or so.
For the filling :
- Grind the Urad Dal coarsely and keep it aside.
- Place a pan on medium heat and add 1tsp of oil.
- After that add Asafoetida, cumin seeds, and fennel seeds.
- Let them fry for a few seconds.
- Next, add coarsely ground Urad Dal.
- Mix everything well and let it cook for 3-4 minutes.
- Later add rest of the salt, chili powder, coriander powder, garam masala, dry ginger powder.
- Mix everything well so that all spices mix well with Urad Dal.
- Lastly, mix in cilantro leaves, mix everything well and take the pan off the heat.
- Let the mixture cool down.
