Indian Aloo Paratha / Stuffed flatbread with potato filling is a very easy, filling, comforting and healthy food that needs only 8 ingredients, takes few minutes and is the perfect dish for any meal!
Aloo paratha is a flatbread that is popular in many Indian states but it is commonly made as a breakfast dish in the state of Punjab. Just like many of the dishes, there are so many variations of this dish, of all, this is my favorite and it is just as my mom used to make for me.
Being a South Indian we have whole other breakfast menu, so we generally make it for a weekday lunch or dinner. According to me, this dish works for any time during the year or any day!
What makes Aloo paratha so special?
Potato is one of the most comforting vegetables that exist, doesn’t matter how we make, mashed/ panfried/deep fried/steamed etc., I do understand it has a lot of carbs, but potato can be a healthy food if it steamed and if no fat like butter or oil is added to it. That’s exactly how we use it here. It is a flavor bomb made from simple ingredients. Another reason is, generally, with most of the Indian flatbreads, we need a side dish, but parathas are an exception. All we need it ketchup, so it makes it perfect even for weekday or weeknight!
Indian Aloo Paratha / Stuffed flatbread with potato filling recipe:
Makes 6-8
- Whole wheat flour / Atta – 2 cups
- Oil / Ghee – 1/2 tbsp + 2 tbsp for roasting the bread*
- Salt – 1/2 tsp or as per taste
- Water – 3/4th – 1 cup
- Potato – 1lb
- Green chilly – crushed – 1 tsp**
- Salt – 1/2 tsp
- Cilantro – minced – 1 tbsp
- Put the flour in a mixing bowl, add salt and oil to it and rub the mixture with your hands such that oil is incorporated.
- Add water 1/4 cup at a time, the dough should be a little softer.
- Once done, knead the dough for 5 minutes and let it rest. I prefer putting it in the fridge for resting.
- For the filling, boil the potatoes, remove the peel and mash them completely.
- Add green chilly, salt, cilantro, green chilly and mix everything well.
- After half an hour, when you’re ready to make parathas, follow the procedure as shown in How to make paratha.
- Serve these flatbreads with ketchup or yogurt. My personal favorite is ketchup.
*Any kind of oil/ghee (clarified butter) / butter can be used for this.
** You can use any kind of green chili as you desire. If you want to make it really spicy, add Thai chilies / Jalapenos, for additional flavor add paprika.
