Aloo Gutke is Uttarakhand style breakfast potatoes, they are so easy to make, delicious, filling and need only 10 ingredients!
Potatoes for breakfast was an alien concept to me for a long time, until a few months ago, when I started having Sunday Brunch at local restaurants. And I loved it! When I was going through recipes and I found this and I thought it was very interesting, so decided to share this with you all!
Why is Aloo Gutke so special?
Potato is one of the vegetables which can be delicious in so many ways and of course, the best way is when it is deep fried. But I don’t believe it is a good idea to have deep fried stuff all the time. When I made this recipe, I was so happy because it uses barely any oil and it is so flavorful! In fact, I made it for dinner and served it with roti and with rice. It was a perfect fit even for that.
Aloo Gutke / Breakfast Potatoes (Uttarakhand Style) recipe:
Serves 4
- Russett Potatoes – peeled, boiled and cubed – 2 large ( 1.5 lb)
- Mustard seeds – 1/2 tsp
- Cumin Seeds – 1/2 tsp
- Coriander powder – 1.5 tbsp
- Turmeric – 1 tsp
- Paprika / Chilly powder – 1 tsp (adjust more or less as per your taste)
- Hing / Asafoetida – 1/8 tsp
- Cilantro to garnish – 1 tbsp chopped
- Water – 1/4 cup
- Oil – 1 tbsp
- In a small bowl mix coriander powder, turmeric, paprika, hing, and water. Make it into a smooth paste without any lumps and keep it aside.
- Place a pot on low-medium heat and put oil in it.
- Once the oil is hot, put mustard seeds and wait for few seconds till they start cracking.
- Add cumin and fry for few more seconds.
- Add the spice mixture and fry it for few seconds.
- Add potatoes and mix everything well such that spice mixture is well coated.
- Let it cook for 3-4 minutes and stir everything at least twice, so that potatoes don’t stick to the bottom.
- Once done, garnish with coriander and serve with hot rice or roti.
