Sooji Halwa/Semolina pudding is a simple and a quick, delicious dessert recipe which needs only 9 ingredients to make!
Semolina is also called as Sooji in Indian cuisines. Sooji is commonly used throughout India for making several dishes ranging from breakfast to desserts. Sooji Halwa is one of the recipes that is made in almost every household. Some people add pineapple or dried coconut into this dish. They are definitely as flavorful as this, but of all the variations I tried this is my favorite!
What makes Semolina pudding so special?
This recipe requires basic ingredients that are readily available at home. It takes very few minutes to make this. It is really hard to not make this dish right and it is delicious!
Sooji Halwa / Semolina Pudding Recipe:
Serves 4
- Sooji / Semolina – 1/2 cup
- Clarified butter / Ghee – 1/4 cup
- Sugar – 3/4 cup
- Water – 2 cups
- Chickpea flour /Besan – 2 tsp
- Cashew Nuts – 1/8 cup*
- Raisins – 1/8 cup*
- Saffron – a pinch / 3-4 strands
- Cardamom – crushed – 1/8 tsp / 1 pod
- Place a pot on low – medium heat.
- Next put sugar and water in the pan.
- Stir the mixture frequently, till the sugar is completely dissolved.
- Next, add crushed cardamom and saffron
- Take the pot off the heat and keep it aside.
- Put a pan on low- medium heat.
- Put ghee in it and let it melt.
- Add semolina to ghee and fry till sooji is golden brown in color.
- Once it is golden brown, add chickpea flour/besan and fry it for a minute.
- Now add the syrup slowly into the fried semolina and stir the mixture simultaneously preferably with a whisk. Try to avoid lumps.
- Turn off the heat and let it sit for 2-3 minutes.
- Stir in cashews, raisins and serve it hot or cold.
*If you are allergic to nuts or dislike them, you need not add them.
**If you want to serve the dish warm, let it sit for 15 minutes after it is prepared. The flavors of cardamom and sugar blend it well.
***If you want to serve it cold, let it cool down completely after that let it sit in the refrigerator for at least 1 hour.
