Sidu / Sweetpea Stuffed Steamed Roll is a simple healthy and delicious breakfast dish popularly made in the state of Himachal Pradesh, India.
I came across this recipe in a television show when I went to India last year and I was so curious to see how the taste and texture would differ if a bread is steamed instead of baking or deep frying. Sidu is generally made for breakfast and is stuffed with sweet peas, walnuts, peanuts, paneer (Indian Cottage Cheese) and a few other ingredients.
What makes Sidu so special?
There are a few things that excite me about this recipe. Its texture and flavor are amazing given the fact that this roll is steamed yeast-based whole wheat dough rather than the traditional oven-baked roll. The traditional stuffing is made out of sweet peas which makes it even special. It is so simple to make, we need not have any special equipment, it is a dish I can make with my daughter over the weekend!
Sidu / Stuffed Steamed Rolls Recipe:
For the bread:
- All-purpose flour – 1/2 cup
- Whole wheat flour – 1/2 cup
- Semolina / Sooji – 1tbsp
- Salt – 1/4tsp or to taste
- Sugar – 1/2tsp
- Active dry yeast – 1tsp
- Warm water – 1/4 – 1/3 cup water
For the filling:
- Oil – 1 tsp (any oil will work)
- Serrano pepper – minced – 1tsp
- Whole cumin / jeera – 1/2tsp
- Ginger – minced – 1tsp
- Garlic – minced – 1tsp
- Frozen green peas – Should be thawed – 3/4 cup
- Salt – 1/4 tsp or to taste
- Cashew nuts – broken 2tbsp ***
- Walnuts – broken 2 tbsp ***
For the bread
- Mix all purpose flour, whole wheat flour, semolina and salt in a bowl and keep it aside.
- Add yeast and sugar to warm water and let it puff up.
- Then add yeast mixture to the flour and mix everything until it becomes a dough ball.
- At this point, the dough ball will not be very smooth and that is fine.
- Coat it with a little bit of oil, cover it with a cloth loosely and keep it is a warm spot for it to rise.
For the filling
- Put some oil in a shallow pan.
- Once it heats up add cumin seeds, garlic, ginger, serrano pepper and fry them for around 30 seconds or until they are not raw anymore.
- Then add green peas, nuts, and salt.
- Mix everything well and saute it for 2-3 minutes.
- Once done put this mixture in a blender or chopper or food processor and grind it into a coarse paste and keep it aside.
Preparation on the rolls:
- Once the dough has almost doubled its size (approx time for rising 1hr, may vary depending on your house temp) split into 8 equal parts.
- Roll each dough ball into a 3-inch circle, you can use some dry flour if required as the dough may still be sticky.
- Put a tbsp of green peas mixture and close all the ends of the dough so that it becomes a ball.
- Repeat the process with rest of the dough balls and place them in a steamer.
- Steam them for approx. 15 – 18 mins or until they are double in size and serve them hot!
*The rolls are best when they are not too big.**It is a good idea not to overstuff them, if the rolls break, the filling will be everywhere and it can become messy.***You can substitute nuts with green peas if you’re allergic or want to avoid nuts.
