Hey friends! I am here with another crazy and yummy experiment and I am so happy to share this with you. I love granola, I don’t have it everyday but love to have it when I have a sweet craving. So the other day, when I was having granola, I was thinking of making something with it, was getting different thoughts about it. I finally decided to make a cookie out of it. Now a days, we find so many healthy cookie recipes, so I started browsing for the details. Most of the recipes I saw were having long lists of ingredients, but I was looking for something simple and easy to just get rid of “sweet right now” cravings. So I did the following recipe with what ever granola I had with me and the recipe turned out well. So I wanted to repeat the recipe with some good granola, so when I was searching for granolas, I found this brand called “Golden girl granola”. It had interesting flavors and this is what made my day much interesting, they had a blogger’s challenge. So I applied for it and got a bag of their granola to make a recipe. So finally I made granola cookies with the golden girl granola and it turned out awesome. This granola was so fresh and crunchy, so it made my cookies much better. So without much more delay let me tell you how I made them!
The 4 ingredients we are going to use are egg whites, ground granola, sugar and salt…sounds good doesn’t it? So first step is to get almost stiff egg whites. Place the room temperature egg whites, in a clean bowl. We can do this step using a hand blender or a stand blender, I used a stand blender. Add salt and start beating it and once it is in soft peak stage, add the sugar and beat it till it is almost stiff peak as shown in the picture below.
Next make the granola into slightly coarse powder and fold the entire ground powder in 2-3 batches into the stiff egg whites. Do this step carefully, else we may deflate the egg whites because of which the cookie may become dense and we don’t want that.
Once done, pour the entire mixture into a ziplok bag as shown it the picture below. Then cut the corner of the bag and pipe 1 inch coins on to a lined baking sheet and let it set for around 10 minutes. After we pipe the cookies, we can preheat the oven to 300 F.
Once the oven is preheated, we are going to bake the cookies for around 15-20 minutes until the crust is firm and the color changes slightly. Once removed from oven, let them cool to touch. Serve the cookies by themselves, else make them like sandwiches with some fresh fruit / jam / chocolate ganache in between. Store them in air tight container.
