Hey friends! Any dish is easy provided we know the right technique to make it. I learnt this lesson in a really hard way while making choux pastry. It was during my stay in France when I tasted eclairs and profiteroles. It just blew my mind. I didn’t try to learn the recipe until few days before I was leaving France. Then I tried browsing and searched different recipes and finally decided on one. But here is the thing….I tried it 8 times in a row, every time they wouldn’t rise properly, they were a mess 🙁 Honestly, if someone would have tasted those eclairs for the first time, the would have never eaten them again 😉 After I started taking lessons from the pastry school, I realized where I was doing the mistake and finally I got the recipe right….. in fact perfect, yaaaayyy!!!. I will tell you rest of my story and do’s and dont’s along the process….Let’s get started!
Pre heat the oven to 400 F. First we are going to put water, butter and salt into a pot and bring everything to a boil.
Then we’ll add all the flour at once, turn off the heat and mix everything well with a spatula until smooth paste is formed.
Put it back on heat and keep mixing it vigorously until a thin layer is formed at the bottom as shown in the picture below.
Once you can see the skin remove the dough and let it rest until is is Luke warm. Next we add eggs, one by one. (This is the step where I did the mistake. I did not allow the dough to cool down and added eggs while the dough was hot. As a result, the eggs got cooked and the dough was a mess.) add the first egg, start mixing vigorously , first the dough falls apart, then it comes together again. Repeat the process for rest of the eggs. The dough will be really smooth once this step is done.
Next prepare a cone with a star nozzle attached to the end of a disposable or reusable cone or ziplok bag. Start piping straight lines 3 inches in length in a slow pace, so they will look like the ones below. You can pipe these on a Silpat or parchment sheet or on a cookie sheet directly.
Place these into the oven and let them bake for 20-22 minutes until golden. Once they come out of the oven let them rest for minimum of 15 minutes before filling them.
