Hey guys! When ever I talk about desserts, you do know me that I talk about portion control….but for me having dessert is also like the “.” at the end of the sentence i.e., I am sending the signal to my belly that the meal is done. Today’s recipe is a very simple snack which can also be a dessert. I made this when I put up a little store on the school fair day few years ago and all of them sold out! I suddenly realized I didn’t share it with you…so here it is 🙂 In order to make today’s snack as a dessert we need to make it a little fancy and trust me we can do it with ingredients we have in our house. So today’s recipe is going to be chocolate dipped cookies and crackers 😀 …..as simple as it sounds….it is so heavenly, quick and no guilt snack if we eat around 3-4.
To make this, first we need to melt the chocolate. I used a mix of 72% dark chocolate and semi sweet chocolate chips, but you can use white or semi sweet or dark or combination of any chocolates and you can add any flavorings you want. This is totally customizable.
There are two ways we can melt the chocolate – By double boiler method or in microwave. I am using the double boiler method i.e., We place a wide shallow pan with 1/2 in water on low-medium heat, then we place a dry tall bowl and put chocolate in it and place it in the wide pan with water. Two things to remember while working with chocolate, never try to melt it in a bowl which is placed on heat directly as it ll burn and the second most important thing is to be very very careful not to allow even one drop of water into the melting chocolate. It will ruin the entire chocolate and it ll become useless. The reason why I am using the double boiler here is because we need the chocolate to be warm for sometime. We can also melt the chocolate in the oven. For that read the instructions on the package and melt them as instructed. The heat and timing of melting it will change depending on the kind of chocolate.
As in the picture below, I have used 4 kinds of cookies and crackers – salted variety, sweet and salty, unsalted and sweet. You can use any kind of cracker you want or you have in hand.
Once the chocolate is melted completely as shown in the pic below…dip each cracker diagonally and place it on a parchment or Sil pat sheet. At this point you can use what ever toppings you want like crushed nuts, sprinkles etc. I have used crushed almonds, fresh fids and sprinkles. I used parchment sheet for a long time, but then I bought Silpat which is a reusable silicon sheet and just fell in love with it. It is temperature resistant, easy to clean and can be used in the oven or in the freezer, for baking anything. So once you place the crackers on the silpat, pop them into fridge for minimum of 15 minutes. And they are ready to eat!
In the picture below, I made a little sandwich using two sizes of sweet and salty cookies. I covered the bigger cookie with warm chocolate, placed some fig slices on one half and placed the little cookie on it. Then I put a little dot of chocolate in the center of little cookie and covered them with sprinkles. It does look fancy 😉 and tasted awesome!
