Hey friends! Banana flower is one the most delicious, easiest and quickest vegetable to cook.The first time I ate this was years ago in a small food joint place and fell in love with it. After so many years, finally I decided to make it by myself and started searching for it. I found the banana flower in a Oriental store and I was very excited. After making it a few times, I really felt I should share it with you! Banana flower not only tasty but is so rich in nutrients like calcium, phosphorous, Iron, Potassium etc! In this post I will be posting how to prepare the flower and in the next one I will share my easy authentic recipe.
There are so many ways to make it, but here is the problem, it takes very long time to prep the flower before cooking it, so most people give it up. But I found a way to prep is quickly. So in this post, I will be telling you how to prep the flower along with an awesome authentic quick recipe! Let’s get started!
Preparation of Banana flower :
Before preparing the flower, place 2 tbsp of yogurt in a bowl, beat it with a spoon and dilute it with 2 cups of water.
Vegans can use lemon water instead of yogurt water.
Pull the reddish petals backwards, as shown in the picture below.
Between these Reddish petals, there will be bunches of yellow tipped florets which will become bananas soon. Pull out the bunch of florets.
Preparing these florets is simple yet the most time taking step. Each flower has to be prepared separately. It involves 2 steps. First pull out the Match stick shaped pisil as shown in the picture below.
Next pull out the outermost petal which looks like a Scale.
As and when the flowers are prepared, put them into the yogurt water. This is a very important step as the every time we separate the parts of the flower, they get oxidized very soon because of they will become dark in color. Putting them in yogurt water helps with the color and it helps in loosing the bitterness of the flower.
As we repeat this process, the petals / Bracts will become pale white in color and after a point, we cannot pull out anymore petals. This is called bud.
Cut the stem as shown in picture below. The chop the bud into desired size pieces and put them in yogurt water. This step has to be done as quickly as possible. Decolorization takes place much quicker than for the flowers.
Keep the flowers in Yogurt water till you cook them, else for 1-2 hours.
